How to make
The quinoa is washed and put on the stove with 1 cup of water. When it boils, it is turned off and left covered for 15 minutes on the stove, until all the water is absorbed.
The lettuce is washed and chopped in a bowl. Cut the red onion and spring onions into small pieces, and the tomatoes into larger cubes. Add the strained canned red beans and corn.
For the dressing, blend the softened avocado with parsley, garlic, lime juice and salt and black pepper to taste in a blender.
Add the cooled quinoa to the bowl. The quinoa salad is poured with the dressing and it is mixed well.
