  • quinoa - 1/2 cup
  • iceberg lettuce - 1
  • tomatoes - 2
  • avocados - 1
  • mozzarella - 2 pieces
  • corn - 1 small can
  • lemons - 1
  • salt
  • olive oil

How to make

Soak the quinoa in water 30 min. Then boil it in 2:1 (water to quinoa ratio). Once the water starts boiling, lower the stove to 3 and stir about 20 min. until swollen and water evaporates. Leave to cool.

Tear the lettuce in a large bowl, dice the tomatoes, avocado and mozzarella, add the corn and cooked quinoa.

Season the salad with salt, olive oil and the juice of 1 lemon.
