How to make
Pour white beans and chickpeas in a bowl and mash them.
Finely chop the onion and add it to the legumes. Mash a clove of garlic and add it as well. Season with cumin, salt, curry and turmeric.
Add the finely chopped parsley and coriander into the bowl. Stir and thicken the mixture with 1 tbsp. of flour. Season according to yourtaste with lemon juice.
Heat oil for an oil bath in a suitable cookware. Shape the falafels. Roll each ball in the panko breadcrumbs and fry them in the heated fat.
Prepare the garlic sauce by finely chopping the garlic clove, then season it with salt and press it with the blade of a knife onto a cutting board. Mix the garlic paste with the yoghurt and stir.
Serve the falafels warm, garnished with the garlic sauce.
