How to make
Wash the pears and cut them into slices. Combine the sugar with 4 1/5 cups (1 L) of water and put on low heat until the sugar dissolves. Let it come to a boil and add the pears. Boil on low heat for 10 min, turning them from time to time.
Take them out of the syrup and let them cool under a lid. Prepare a sauce by whipping the egg yolks with the sugar. Heat in a water bath and continue whipping for another 4 min, pouring in the wine a little at a time.
Remove from the stove and stir for 2 more minutes. Beat the cream and add it to the egg mixture. Serve the pears into plates and pour sauce on top.
