How to make
Cut the pork into large chunks. Put it in a greased tray and add the whole peeled garlic cloves. Sprinkle it with plenty of salt and pepper. Add a trickle of oil. Pour the wine over and cover the tray with foil.
After 1 hour, put the pork to bake in a highly heated oven. The cooked meat is removed to a large plate. Deglaze the tray with 1 cup water on a heated stove top, while gently stirring. Strain the reconstituted sauce straight into another pot. Put it on the stove and season it with spices.
Add honey, mustard and 1 tablespoon of tomato paste or ketchup to the sauce. Stir briefly and make a viscous sauce with a bit of dissolved flour. Add meat to the plate with the sweet wine sauce and serve the dish with mashed potatoes and vegetables.
