How to make
Cut the meat into roughly same-sized pieces. Sprinkle with black pepper, without salting them. The salt would only draw out its juices, while we want it to turn out tender and juicy.
Heal olive oil in a deep pan (wok) and put the meat to fry until golden, while stirring periodically and turning it on all sides.
Put the ketchup in a bowl - use high quality ketchup, yes it's more expensive but the taste matters. To it, add the sugar, honey, salt, rice vinegar and water.
Stir everything with a stirrer until homogeneous. Once the meat is evenly fried and tender and juicy to the taste, remove it from the pan and leave it in a plate with a paper towel to drain out the excess fat.
In the same pan, remove the remaining oil and put the mixture for the sauce in it. Cook on a high stove, it will begin to simmer and thicken after a few min., at that point add the bits of meat and stir until flavored well.
Remove from the stove. Serve the meat with a garnish of rice or mashed potatoes.
