"We want an afternoon coffee and a slice of that Tiramisu every day."

Ingredients

  • raspberries - 1.1 lb (500 g)
  • cognac - 1.7 fl oz (50 ml)
  • white balsamic vinegar - 1 tbsp.
  • salt - a pinch
  • sugar - 3.5 oz (100 g)
  • ladyfingers - 3 packages /about 40 pcs./
  • cream - 2 cups (500 ml)
  • mascarpone - 1.1 lb (500 g)
  • white chocolate - 5.3 oz (150 g)
  • vanilla essence - 2 tsp.
  • powdered sugar - 3.5 oz (100 g)
  • orange peel - grated peel of 1 orange
  • for decoration
  • raspberries - 3.5 oz (100 g) fresh
  • mint - leaves
  • cocoa - natural for sprinkling

How to make

Wash and clean the raspberries. Pour the vinegar, cognac, salt and sugar over them and set them aside for 30 minutes. The raspberries will release their juice and also absorb the flavors.

Mix the mascarpone with the powdered sugar.

Beat 10 fl oz (300 ml) of the cream until fluffy peaks form.

Melt 6.7 fl oz (200 ml) of the cream and the moment when it boils, break the chocolate into small pieces and add them to the cream.

Stir until the mixture is homogenized. Leave it to cool.

Add the white cooled ganache to the mascarpone in parts and beat on low speed with a mixer.

Finally, add the whipped cream, orange peels and vanilla in two parts, mixing carefully with a spatula.

Blend the raspberry mixture with a blender. You can pass it through a strainer if desired.

Prepare the ladyfingers and a rectangular tray.

Start making the Tiramisu dessert.

Put some of the cream on the bottom. Dip the ladyfingers in the raspberry sauce and place them on top of the cream.

Ideas: This dessert can also be prepared with other fruits. For example, strawberries, blueberries or blackberries.

It can also be made into individual portions in glasses.

Cover the ladyfingers with cream, drizzle with some of the raspberry sauce and arrange another row of ladyfingers dipped in raspberry sauce. Dip and arrange the remaining ladyfingers in the same way.

Finish off with cream and refrigerate for at least 6 hours /best overnight/.

Before serving the white tiramisu with raspberries, sprinkle with cocoa through a fine sieve and decorate with fresh raspberries and mint leaves.
