Ingredients

  • pork shank - 1 small
  • onions - 1 onion
  • carrots - 1
  • bay leaves - 2
  • allspice - 2 - 3 grains

  • garlic - 2 cloves
  • carrots - 1
  • celeriac - 1/4 pc.
  • peppers - 1 red
  • paprika - 1 tbsp.

  • dry spearmint - 3 tbsp.
  • dry lovage - 1 tsp.
  • dry celery - 1 tbsp.
  • dry savory herb - 1 tsp.

How to make

The prepared pork shank is washed and placed in a pressure cooker. Water is poured up to the specified level.

Add salt to taste, chopped onion and carrot. Add bay leaf and allspice.

The pot is closed tightly and the shank is cooked for about 45 minutes after the steam starts to come out through the valve. The cooked shank is left to cool, then it is deboned and cut into small pieces.

The beans are soaked since the evening before. The water is changed and they are placed on the stove to boil. After boiling, the water is thrown away again.

The beans are transferred to the now empty pressure cooker, along with the finely diced onion, carrot, celeriac, pepper, whole garlic cloves and paprika.

Water is poured and the pot is closed. The beans are cooked for 20 minutes, then the lid is removed.

Add salt to taste, tomatoes and spices to your taste. I used dried spearmint, dill, celery and savory. Add the chopped pork shank. The bean stew is cooked for about 15 more minutes and is ready to be served. This version of pork with beans turns out very tasty.
