How to make
Grease a bowl with a little oil and put it in the refrigerator.
Heat the butter, milk and flour in a saucepan, stirring.
Add the yolk and mix.
Remove the mixture from the heat and add the pumpkin puree.
Beat the egg white with a pinch of salt, add the sugar and starch.
Add the egg white in parts to the pumpkin mixture, stirring gently with a spatula.
Transfer the mixture to the bowl and bake the souffle in a preheated oven at 360°F (180°C) for about 20 minutes.
The pumpkin soufflé is fluffy and very tasty.
