How to make
The sweet potatoes are cleaned and cut into small cubes.
Clean the vegetables and chop them - the shallots, the leeks - into rings, the garlic is pureed.
In a large pot, pour olive oil to heat up, add the chopped vegetables and stew for about 2 minutes. Add salt.
Add the potatoes, spices and stew for another 2-3 minutes while stirring.
Dissolve the broth in warm water and pour it over the potatoes. Let it simmer on a moderate heat for about 20-25 minutes or until the potatoes are fully cooked.
Toast the nuts in a non greased pan until nicely golden.
When serving, sprinkle a little bit of them and a little Parmesan flakes on top of the soup.
Optionally, the potato soup can be blended with a blender.
