"A sweet potato soup, which you can recommend to all your friends."

Ingredients

  • sweet potatoes - 2 medium - sized
  • leek - 1 stalk
  • onions - 1 onion, shallot
  • garlic - 1 clove
  • vegetable broth cube - 1 pc.
  • water - 1 and 1/2 l
  • turmeric - 2 pinches
  • chili - 2 pinches, powdered (for spiciness you can use hot chili)
  • salt
  • black pepper
  • olive oil - for cooking
  • pine nuts - a little, optional
  • parmesan - optional, flakes

How to make

The sweet potatoes are cleaned and cut into small cubes.

Clean the vegetables and chop them - the shallots, the leeks - into rings, the garlic is pureed.

In a large pot, pour olive oil to heat up, add the chopped vegetables and stew for about 2 minutes. Add salt.

Add the potatoes, spices and stew for another 2-3 minutes while stirring.

Dissolve the broth in warm water and pour it over the potatoes. Let it simmer on a moderate heat for about 20-25 minutes or until the potatoes are fully cooked.

Toast the nuts in a non greased pan until nicely golden.

When serving, sprinkle a little bit of them and a little Parmesan flakes on top of the soup.

Optionally, the potato soup can be blended with a blender.

The Sweet Potato Soup is ready.
