Something light and tasty for the summer days - quick and easy, suitable to serve both hot and cold.
Cut the onion into large pieces and stew it with a little water, sunflower oil and paprika.
Peel and chop the zucchini and sweet potatoes into bulky pieces and when the onion is stewed, add them to it along with about 3 cups of water. When the soup boils, reduce the heat and leave it to simmer over low heat until the vegetables soften.
Once the sweet potatoes have softened, season them with salt and add the coarsely chopped parsley. Turn off the hob and leave the soup to boil until it's fully cooked. Blend it.
