How to make
Cut the pork into small bites. Put them to boil until semi-cooked, then remove and allow to dry. Save the meat broth.
Preheat oil or olive oil and put the meat to fry evenly on all sides, stirring occasionally. While frying, chop the leeks, peppers and zucchini finely. Cut the tomatoes as well and remove the inner soft parts. Only cut the hard outer skins into cubes. Once the meat has browned, remove it and pour in a little more oil if needed.
Add the leeks and peppers to braise too. Then add the zucchini and then the rice. Stir until each rice grain absorbs oil and add a little black pepper and paprika. Add a cup of hot broth from the pork and the return the meat. Stir until the rice absorbs the water and add a cup of broth 2 more times until the rice becomes completely soft.
To finish, mix it with the diced tomatoes. Finally, add spices to taste, remove from the heat and cover for 15-20 minutes to smother.
The pork with rice and zucchini can be prepared with vegetables to your liking, and instead of boiling, can also be baked in the oven.
