How to make
Salt the pork loins lightly with black pepper, salt, lemon thyme, pressed garlic cloves and pour on the olive oil. Leave to marinate for at least 6 hours or overnight.
Wash the champignons, clean them and if they're on the smaller side cut them with their stems in 2.
Cut the slices of boiled-smoked bacon into identical rectangular pieces.
Arrange all the products in a glass cook pot that you've greased with a little olive oil or part of the meat's marinade.
First arrange a row of the champignons, followed by a row of loins. Smear the pork with mayonnaise using a brush, sprinkle spices. On top of the meat arrange mushrooms, pieces of bacon, loins and mayonnaise with spices.
Finish off with a 3rd layer of mushrooms, pieces of bacon, smear them with mayo.
Put the cook pot in a cold oven and gradually heat it up to 370°F (190 °C). After it reaches that temperature, let cook 25 min. and turn it off.
Serve the dish basted with some of the sauce released in the pot during cooking.
