How to make
I skim all of the meat products.
After they are frozen, I add salt to taste.
I boil in a pressure cooker for 30 minutes. Before closing the cooking lid, I add the whole peppercorns and the bay leaf.
After cooking them, I debone them. I add the boneless meat to the broth.
While deboning the cooked pig parts, I discard the fatty parts and the skins from the ears, legs.
In a bowl, I beat the eggs with a fork, add the lemon juice to them, so that it does not lump up when pouring them into the hot broth.
I add the ground black pepper and crushed garlic to the cooked brawn.
I mix everything and it is ready! Enjoy!
This brawn soup is good to eat warm - like a soup.
And some like the brawn with pig's feet, ears and tails cold, like my father did.
