How to make
Cut the fish into pieces and season it with salt and black pepper. Roll it in flour and fry it in olive oil.
Fry the flour in the fat left over from frying. Add the finely chopped tomatoes, garlic, bay leaf.
Pour the wine and a little water. Put it over the heat until the mixture boils. Add salt to taste and pour the mixture into a baking pan.
Arrange the fried fish on top and bake for about 20-30 minutes. Serve the fish sprinkled with parsley.
