"An appetizer that`s going to drink a lot of wine in the company of old friends!"

Ingredients

  • feta cheese - 1 cup (250 g)
  • leeks - 1 large sprig, without the green end part
  • oil
  • paprika - 1 tsp
  • black pepper - freshly ground
  • salt - as needed
  • parsley - 4 - 5 sprigs crushed
  • tomato paste - 1 - 2 tablespoons, thick, sweet
  • olives - 5 pitted

How to make

Crumble the feta cheese into a bowl, add the finely chopped leeks and begin to mash. Add about 3 1/3 tbsp (50 ml) of oil while you continue mashing.

Add the finely chopped olives and once homogenized, add spices to taste, mix it with the tomato paste and parsley.

Put the butcher’s appetizer in a refrigerator for 30-40 minutes before serving.
