Crumble the feta cheese into a bowl, add the finely chopped leeks and begin to mash. Add about 3 1/3 tbsp (50 ml) of oil while you continue mashing.
Add the finely chopped olives and once homogenized, add spices to taste, mix it with the tomato paste and parsley.
