Ingredients

  • spinach - 0.9 lb (400 g)
  • rice - 1/2 cup
  • oil - 1/5 cup (70 ml)
  • onions - 1
  • carrots - 1
  • tomatoes - 2 tbsp. diced
  • flour - 1 tbsp.
  • thickener
  • eggs - 1
  • yogurt - 3 - 4 tbsp.
  • parsley
  • salt - to taste

How to make

The spinach is washed and finely chopped. Heat oil in a pot and fry the finely grated carrot, then the finely chopped onion. After 2 minutes, add the tomatoes.

When they soften, pour the flour and mix well. Pour about 1.5 liters of water and add chopped spinach and washed rice.

The soup is cooked over moderate heat until the rice softens. Prepare the thickener by beating the egg with the yogurt in a bowl.

You can also add a spoonful of vinegar to it. Pour the thickener into the spinach soup in a thin stream. It is mixed and left without a lid so that it does not lump up. It can be served with chopped parsley!
