How to make
Leave the snails to clean themselves for about one night, covering them with a lid in a suitable container.
Wash them thoroughly with water.
Stew the finely chopped spring onions, until soft. Add the spinach.
Cook, by stirring constantly, until the spinach also softens and begins to change color. Add about two liters of warm water.
When the water boils, add the washed rice, then add the snails. Season with salt and black pepper and boil for about 20 minutes.
The soup is extremely healthy.
