How to make
The snails are left in a well sealed airy container with some bread and water for 48 hours to cleanse them.
Then they are washed and poured with 1.5 liters of boiling salted water. Boil for 60 minutes with olive oil under the lid.
Add the chopped dock, nettles, onion, chives, lovage, peppers and rice.
After another 30-40 minutes, the snail soup with dock and nettles is ready.
