Ingredients

  • olive oil - 2 tbsp.
  • onion - 1 onion (finely chopped)
  • zucchini - 2 pcs.
  • potatoes - 1 pc. (diced)
  • spinach - 3.5 oz (100 g) cut into strips
  • parsley - 3 bunches
  • vegetable broth - 6 cups (1.2 liters)
  • cream - 3/4 cup (150 ml) confectionary
  • salt - by taste
  • black pepper - by taste

How to make

The onions and zucchini are stewed in hot oil until they change their color.

Add the potatoes, spinach, parsley and vegetable broth.

Boil it for about 20 minutes and after that - let it cool.

The zucchini soup is pureed and placed back onto the heated hob. Season the soup with salt and black pepper.
