How to make
Clean and chop the spinach. Blanch it for 3 minutes in boiling salted water. Strain it in a colander.
Finely chop the onion and carrot.
Pour 1/2 cup of olive oil into a pot, add the chopped vegetables and fry them.
Add the spinach. Pour about 4 cups of warm water, add salt, cover it with a lid and boil the nutritious spinach soup for 10-15 minutes.
Add the washed rice and continue boiling, until it's fully cooked.
Before removing the rice soup from the heat, add a generous pinch of finely chopped mint.
Beat the yolk with 3.5 oz (100 g) of yogurt.
Pour it into the broth, by stirring vigorously, until it is homogenized.
Serve the spinach soup with rice and cheese, by sprinkling it generously with white cheese beforehand.
