How to make
Place the pumpkin pieces in a bowl. Sprinkle with sugar, add honey to taste, but just drizzle it.
Sprinkle with cardamom and ground saffron (saffron is said to be a strong anti-depressant, by the way).
Put the pumpkin to boil on low heat for 1.5-2 hours.
Remove it and leave it to cool.
To serve, garnish with pistachios and tahini (sesame paste).
The Ukrainian Honey Pumpkin is served cold and optionally with maple syrup.
