"Fresh lemon muffins with chia - healthy eating is honored at home"

Ingredients

  • eggs - 2 pcs.
  • cottage cheese - 3.5 oz (100 g)
  • rice flour - 1.1 oz (30 g)
  • tapioca flour - 1.1 oz (30 g) rice or another
  • chia seeds - 0.35 oz (10 g)
  • baking powder - 1 tsp.
  • stevia - or sweetener of choice
  • lemon juice - approximately 1 tbsp (15 ml) freshly squeezed
  • lemon peel - to taste

How to make

First, soak the chia seeds in a cup of water and let them swell.

Meanwhile, prepare your muffin mixture by first beating the eggs in a bowl.

Then add the rest of the products without the chia and mix well.

When the seeds have swollen, add them and mix well again until you get a homogeneous mixture, which you distribute in muffin tins.

Bake the lemon muffins in a preheated oven at 390°F (200°C) until done.
