How to make
First make coconut balls by mixing soft cream cheese, powdered sugar and coconut shavings in a bowl, by mixing well.
The resulting mixture is briefly left in the refrigerator until the cake mixture is prepared.
Beat the eggs and sugar in a mixer bowl until a white mixture is obtained. Add oil, milk and finally sift the flour with baking powder and cocoa.
Everything is mixed to a homogeneous mixture.
In disposable molds with muffin paper cups, pour 1 tbsp. of the cocoa mixture. A small ball of coconut shavings, cream cheese and powder is placed on top. Pour another spoonful or two of the mixture to cover the white ball, but not more than 3/4 of the volume, because it will overflow when baking and arrange the cups in a tray.
Makes about 12 pieces, depends on the size.
Bake the cocoa cupcakes in a preheated oven at 360°F (180°C) until fully baked, 20-25 minutes.
Take them out to cool and sprinkle the cupcakes with powdered sugar.
