Ingredients

  • eggs - 3 pcs. (L size)
  • coconut oil - 3 1/3 tbsp (50 ml) melted
  • vanilla - 1/2 tsp.
  • lemon juice - 1 tbsp. (15 ml)
  • coconut flour - 0.7 oz (20 g)
  • sweetener - 1.1 oz (30 g), or to taste (I mixed stevia with erythritol)
  • baking powder - 1/2 tsp.
  • coconut shavings - 1.1 oz (30 g)

How to make

Everything without the coconut shavings is beaten. Finally, they are added, while stirring with a spoon.

Divide mixture into muffin tins. I used small silicone molds. 6 pieces are obtained.

The muffins are baked in a preheated oven at 360°F (180°C) for 20 minutes, but my oven is gas. Judge for yours!

I use stevia for pastries and powdered erythritol, which are 1:1 in ratio with sugar.
