How to make
Preheat your oven to 200ºC.
Grease eight ramekin or aluminum cups with butter, then sprinkle with cocoa and shake off the excess.
In a bowl, mix the butter and chocolate and melt it in a water bath. Remove the chocolate mixture from the heat and leave to cool for 5-10 minutes.
Beat the eggs with the sugar, then add the vanilla and flour. Then add a thin stream of chocolate mixture, by stirring at all times.
Distribute the chocolate mixture in the prepared molds. I needed 8 ramekin cups.
Put the lava cakes on medium heat in the preheated oven and bake them for 8-9 minutes.
Baking time may vary with different ovens. Once you remove the lava cakes, set them aside for 2-3 minutes.
Use a sharp knife to run along the edge of the molds, then turn the chocolate souffle into a serving dish.
You can serve them with Crème Anglaise, a ball of vanilla ice cream or just sprinkle them with powdered sugar and garnish with fruit.
