How to cook
Wash the lemon and grate its rind. Squeeze out the juice. Beat the eggs with the sugar and add the oil, lemon juice and rind.
Mix everything and in a separate dish, combine the flour, baking powder and vanilla. Pour the dry blend into the wet one while beating nonstop with a mixer.
Finally, add the yoghurt and stir carefully.
Heat the oven to 360°F (180 °C), place paper muffin cups in the muffin tray, fill them 3/4 of the way with the mixture. Bake 15-20 min. Decorate as desired.
