Clean the hot pepper from the seeds and put them together with the peanuts, garlic, ginger in a blender or in the bowl of a mixer.
Blend them and transfer them into a pot, by mixing them with the soy sauce and water.
The heat should be quite low, otherwise the mixture may burn.
Boiling and stirring the Peanut Sauce Sambal Kacang takes about 1 hour. Before serving, mix with lemon juice.
