How to make
Grind up the red chili peppers along with their seeds, preferably in a mortar and pestle. Braise the sliced garlic in the oil briefly and add the peppers.
Cook for about 5 min., while stirring.
Fill up with the water and wait for it to reduce. Season the paste with salt and vinegar. Store in a glass jar in the fridge.
This spicy Sambal paste is suitable for meat dishes.
