How to make
Peel and cut the onion into crescents. Put them to fry in olive oil until soft. To cook faster, sprinkle with a pinch of salt - it quickly extracts the juices from the products and makes them soften.
Add the mushrooms and fry until slightly golden.
Add the chicken breast, cut into bite-sized pieces and season with black pepper and a little salt. When they turn white, add the finely chopped jalapeño, fresh coriander leaves, cumin and more black pepper if you like.
Cook until the water from the tomato evaporates and the meat is fully cooked.
Remove from heat and place another clean pan on high heat. Heat the tortillas briefly, by toasting them on each side.
Place two lettuce leaves on top of each and add the chicken filling. Fold the delicious fajitas and serve with optional Mexican cuisine tomato salsa.
