  • parsley - 1 large bunch or 2 medium ones
  • zucchini - 1 pc. medium - sized
  • spring onions - 3 - 4 cloves (only the green part)
  • eggs - 1 pc.
  • breadcrumbs - about 5 tbsp.
  • garlic - 2 cloves
  • salt
  • black pepper - 1/2 tsp.
  • oil
  • breadcrumbs - for breading

How to make

The zucchini is washed and you can grate it unpeeled into a large bowl.

If it is of the darker ones, they are not too watery and do not need to be squeezed out of the water.

Finely chop the onion and parsley with the stalks very finely and press the garlic.

Add the egg, breadcrumbs, black pepper, salt to taste and mix everything.

Shape the flat vegetable patties and roll them in breadcrumbs.

The patties are fried on medium heat on both sides until golden.

The parsley patties with zucchini are super delicious!
