Ingredients

  • black rice - 7 oz (200 g)
  • cherry tomatoes - 9 oz (250 g)
  • basil - 3 sprigs, fresh
  • mozzarella - 4.4 oz (125 g) fresh
  • pumpkin seeds - 2 tbsp. with a tip
  • hemp seed - 2 tbsp. with a tip
  • lemon - 1 pc.
  • olive oil - about 3 1/3 tbsp (50 ml)
  • salt - by taste

How to make

Wash the black rice and boil it until the grains are soft. I know from experience that depending on the brand and quality of rice, the cooking time may be different.

Therefore, I taste the rice grains and when I think that they are ready, I pull them away from the heat and immediately strain, if there is any water left.

After you have boiled the imperial rice, season it with olive oil, salt and lemon juice (freshly squeezed). Leave it to cool.

Chop the washed cherry tomatoes into a bowl. Cut them in halves, but if they are bigger, they can also be cut into quarters. Wash and tear the basil leaves and mix everything in the bowl - the cooled rice, tomatoes and basil.

Flavor the rice salad with more olive oil, salt and lemon juice.

Divide it into two portions and sprinkle it with the pumpkin and hemp seeds.

Add slices of fresh mozzarella on top and serve it.
