How to make
Cut both of the avocados in half lengthwise. Remove the pit and scoop out the soft interior with a spoon, by keeping the skin.
Immediately drizzle with the freshly squeezed juice of 1 lime and mash with a fork. Leave the texture coarser and don't puree it.
Season with salt, 2 tablespoons of olive oil, finely chopped coriander leaves and some finely grated lime peel.
Coarsely chop the arugula and add it to the avocado.
Mix well and fill the fruit skins in the shape of boats with the mixture. You will serve the healthy vegetable salad directly in them for a more beautiful and spectacular look.
Cut the cherry tomatoes into quarters (if they are very small, just cut them in half).
Season them only with olive oil and salt and place the avocado shells in the plates.
Drizzle with a little more olive oil and chopped arugula leaves and garnish with the red lollo rosso leaves.
Serve two halves of the salad per serving. From these products, you will have exactly two light salads, which can even be eaten in the form of a spread with toasted bread.
Important: Use a good and aromatic olive oil for the special salad with avocado and cherry tomatoes.
