How to make
The special salad with arugula and nectarines is for lovers of meat salads and fresh green salads.
The washed and well drained fresh arugula leaves are placed in a bowl along with the cherry tomatoes (cut in half) and some almonds - lightly roasted in a non greased pan.
Season them with olive oil dressing, salt, balsamic vinegar and lemon juice.
Transfer the green leaves into a salad bowl or in two separate portions on a plate.
Arrange thin crescent slices of unpeeled nectarines (well washed for this purpose) on the side.
Cut the jamon into strips and sprinkle the salad with plenty of it, as well as the remaining nuts and chives.
Serve the special arugula salad while it is fresh and indulge in its wonderful taste, which is a combination of light sweetness and acidity of the fruit with the salinity of the jamon, the harsh and very fresh and pleasant taste of arugula and the crunchiness of the almonds.
