How to make
The raw sausage is cut into pieces and fried in heated oil. As soon as it is fried, take it out, put the cleaned and chopped leek in its place along with 50 ml. water and let it stew.
As soon as it softens, add the chopped and peeled tomatoes. Stir the tomatoes and leeks several times, pour a tea cup of water and add as much salt as you like.
A little sugar is added to kill the sour taste of the canned tomatoes and spices.
The fried sausage is returned into the cookware in which we are cooking and the stew is left to cook at a moderate temperature for about 20 minutes, after which it is thickened with a tablespoon of flour dissolved in a little water.
Leave the sausage stew for another 5-6 minutes, then sprinkle the leek stew with finely chopped parsley and it is ready to be served.
Serve the Leek and Sausage Stew with fluffy and soft bread.
