Cut the vegetables and sausage into chunks. At the bottom of the, crock pour half the fat. Add the vegetables and sausage and pour in the remaining fat and tomato paste dissolved in 2 cups hot water.
Added spices to taste, pour in the wine, stir gently and cover tightly. Bake the stew for 1 hour at about 430°F (220 °C). This could be made in small earthenware dishes or one big stew crock.
