Clean and cut the leeks into strips. Stew them in the lard. Add the chopped celery, flour, tomato paste and paprika.
Once the vegetables are sauteed, add the chopped tomatoes and pour in water so that it is nearly covered.
Put the stew in a preheated 390°F (200 °C) oven and bake for about 35 minutes. Take it out, sprinkle it with black pepper and chopped parsley.
