Ingredients

  • flour - 6 oz (170 g)
  • sugar - 3.5 oz (100 g)
  • vanilla sugar - 1 tbsp
  • grapefruit juice - 2/5 cup (100 ml) freshly squeezed red grapefruit
  • grapefruit peel - 1 tbsp. grated
  • milk - 1/2 cup (120 ml)
  • oil - 2 2/3 tbsp (40 ml) or olive oil
  • rum essence - 3 drops
  • red dye - 1 tsp. (Dr. Oetker)
  • baking powder - 1 tbsp (10 g)
  • For the glaze
  • grapefruit juice - 1 1/3 tbsp (20 ml)
  • powdered sugar - 4 tbsp.
  • red confectionery dye - 1/2 tsp. (Dr. Oetker)

How to make

Mix the freshly squeezed grapefruit juice with the milk, oil and both types of sugar. Stir, until the sugar dissolves well. Add the rum essence and shavings.

Sift the flour with the baking powder and pour it into the liquid mixture, by beating well until a smooth, homogeneous mixture is obtained. Now is the time to add the red dye, while stirring with light movements to color the mixture fully.

Grease and flour a baking pan with a diameter of 20 cm and spread the reddish mixture evenly in it. Bake at 350°F (175°C) with a fan for about 30 minutes, after the 25th minute it is good to check it with a toothpick just in case.

Cool the finished cake on a wire rack and prepare the glaze. For it, mix all the indicated ingredients and if balls form from the powdered sugar, beat with a wire whisk, until you see that you have a smooth consistency.

Pour the mixture over the middle of the cake and spread it evenly around the edges. After leaving it for 20-30 minutes, it is ready for consumption.

A wonderful taste with citrus flavors for summer days. Economical and effective!
