  • boiled beans - 2/3 cup (150 ml) of liquid (or canned)
  • dijon mustard - 1 tsp.
  • ground black pepper - 1/2 tsp.
  • lemon juice - 1 tbsp.
  • oil - about 2 1/2 cups (600 ml)

How to make

I had homemade canned beans and I used the liquid from it.

I poured the liquid into the bowl for a liquidizer or you can also use a jar or other suitable vessel for blending.

Then I add Dijon mustard, ground black pepper and lemon juice.

I turn the liquidizer on high speed, by keeping it at a low position.

Gradually, I start to raise the liquidizer up, without rushing and oil is poured in a thin stream, until it thickens nicely.

After making sure that the liquid is thick enough, I stir well, so that a completely homogeneous mixture and no floating oil remains.

I cover the bowl with something, refrigerate it and enjoy a delicious homemade mayonnaise made from beans.

The mayonnaise from the water of boiled beans is ready.
