How to make
The jam is made first. The raspberries are put in a saucepan. Stir over medium heat, until it thickens. The jam is poured into a bowl and left to cool. Finally, it is sweetened as much as you like.
Beat the butter with the cream cheese. Then add the egg, vanilla and sweetener. It is beaten again.
Add the almond and coconut flour. Mix with a spatula and knead the dough. The dough is wrapped in foil and placed in the refrigerator for 30 minutes.
Balls are formed from the finished dough - 0.7 oz (20 g) each and they are arranged in a tray covered with baking paper. A hole is made on top with a finger or a small spoon.
Bake at 340°F (170°C) for about 15 minutes. But every oven bakes differently, mine is gas. Keep an eye on them constantly, so you don't burn them.
When they are removed from the oven, they are gently and carefully pressed on top again with a spoon. The sweets are then left to cool completely.
Finally, they are filled with raspberry jam and sprinkled with stevia and coconut shavings.
