How to make
Clean and finely chop 3 stalks of leek.
Cut the meat into pieces as well.
Also cut 1 green tomato, 1 carrot, 1 pepper and a few cauliflower pieces from a pickle, which is made with only salt.
Heat the oil and fry the pork with a little salt and black pepper.
As soon as the meat changes its color, add the leeks and stew them for a few minutes, while stirring.
Then add the chopped pickled vegetables, flour, paprika and finely chopped celery leaves.
Stir and pour 1 cup of hot water.
Transfer the stew into a baking pan and put it to bake in an oven at 390°F (200°C) for 1 hour, until the meat is fully cooked.
Before serving, sprinkle the pork stew with chopped fresh parsley.
Serve Oven-Baked Pork and Leeks Stew with warm homemade bread and a glass of red wine.
