How to make
The apricots are pitted and with a very sharp knife I peel them, but before that I put them in boiling water for a few seconds, so that I can peel them more easily and quickly.
I put them in a pot, sprinkle them with sugar and leave them like that for a whole night. I don't add water.
The next day, I boil them on a moderate heat for about 40 minutes. Finally, I add 1/4 tsp. of citric acid dissolved with a few drops of water.
I also add a handful of peeled nuts from the apricots themselves and the vanilla. I distribute the apricot jam into warmed jars and turn them over.
The apricot jam with vanilla flavor is ready.

Every jam, whether it is from cherries, raspberries, strawberries or any other fruit, I prepare it in the same way.
