How to cook
In a bowl, mix the soft butter with the sugar, the eggs, the essence, the apricot jam and the sifted flour with the baking powder.
A smooth, non-sticky dough is obtained, from which balls (which are 28-30 g) are formed.
One part of the balls is flattened between the palms and pinched with the thumb and forefinger on both sides.
I also made a second version for which I left the balls round.
With the help of a tool with a round end, a groove is made diagonally and on the round ones - only an opening in the middle.
They are arranged in a tray covered with baking paper and baked in a preheated oven at 360°F (180°C) for 15 minutes.
The baked festive cookies are spread with apricot jam and rolled in or sprinkled with coconut shavings - both types of cookies.
