Ingredients

  • flour - 9 oz (250 g) with 11% protein
  • baking powder - 1 tsp.
  • butter - 4 oz (113 g) at room temperature
  • granulated sugar - 5.6 oz (160 g)
  • eggs - 1 pc. (L size)
  • vanilla extract - 1 tsp.
  • cherries - 5.6 oz (160 g) cleaned

How to make

The cleaned cherries are cut into halves or quarters.

Mix the flour, salt and baking powder in a bowl.

In a bowl, beat the soft butter and sugar until creamy. Add the egg, vanilla and flour mixture in two additions, by beating on low mixer speed.

Add the cherries and mix to distribute them properly in the dough, bearing in mind that the dough is heavy and sticks to your hands, it is not possible to work with it if it is not chilled enough.

When prepared in this way, it is wrapped in cling film and left for 2 hours in the refrigerator, or for 30-40 minutes in the freezer.

From the cooled dough, balls of equal size are torn off, use a small ice cream scoop - 1.4″ (3.5 cm).

Arrange them in a tray covered with baking paper, at a distance from each other.

Bake at 340°F (170°C) with a fan for about 17 - 20 minutes.

Take them out and let them cool in the same way, it is butter dough and breaks easily while hot.

Once the cookies have cooled well, they can be drizzled with melted dark/white chocolate or sprinkled with powdered sugar.

The easy butter cookies with cherries are ready.
