How to make
Finely grate the peel of both oranges (only the orange part). Squeeze the juice of one of the oranges - about 2 fl oz (60 ml) of juice.
Sift the flour with baking powder and a pinch of salt into a bowl.
Put 1.8 oz (50 g) of sugar in a coffee grinder or blender. Add the orange peels and grind everything until a fine and slightly moist powder is obtained.
The goal is for the peels to flavor the sugar and enhance their aroma.
Put the lard with the orange sugar in a blender along with the sweet wine, freshly squeezed juice and vinegar and blend until a cream is obtained. It may be slightly lumpy, but don't worry about that. You can also beat it with a wire whisk.
Combine the dry and liquid mixture and knead a smooth and soft dough. Do not knead for long, just until the flour is absorbed and a certain smoothness is achieved. If the dough is too soft, add very little flour.
Shape it into a ball, wrap it in cling film and refrigerate for 1 hour to set.
Prepare two or three baking trays lined with baking paper. Preheat the oven to 180°C with a fan.
Take out the butter cookie dough and set aside half and refrigerate the other half.
Roll it out into a thickness of about 0.5 - 1 cm. According to the original butter cookie recipe they are from 1 cm to 1.5 cm, but I think they are very thick, so I make them up to a maximum of a centimeter or about 1 finger.
Cut out stars with a cookie cutter and arrange them in the tray.
Bake the Christmas cookies until the edges of the cookies are slightly golden - 20 minutes.
Collect the scraps and cut out the next batch of Christmas cookies with the remaining dough.
I got 2 and a half trays, but if you make them thicker, two trays will be enough.
Wait a little, because immediately after taking them out of the oven, the cookies are very soft and delicate, then they immediately harden.
While they are warm, roll them in powdered sugar and let them cool completely. After this happens, sprinkle with powdered sugar again, so that they turn white (the first layer has melted and stuck like a layer of sugar glaze, that's the goal).
