How to make
In a large bowl, sift the flour with a pinch of salt and one level top teaspoon of baking powder.
Add the sugar, cold butter (cut into pieces), 1 egg, two egg yolks and the grated lemon peel.
Knead a soft dough. Shape it into a ball, wrap it in a piece of cling film and put it in the fridge for 30 minutes.
While the dough is cooling, cut the apple into small pieces. Put it in a small pot, add one tablespoon of water and 5.3 oz (150 g) of apricot marmalade.
Place the pot on the stove and boil, until the apple softens (about 10 minutes).
If the apple is more sour, you can add a little sugar. Cool the stuffing.
Roll out the dough onto a floured surface. Cut out the biscuits with a heart mold. Place a teaspoon of the filling on some and cover with another. Pinch the edges with a fork to seal them well.
Arrange the biscuits on a baking pan lined with baking paper (spaced apart).
Bake the apple biscuits at 340°F (170°C) in a preheated oven for about 10 minutes.
Cool the Apple Heart Biscuits on a wire rack.
