How to make
Heat the oven to 320°F (160°C), add the almonds and bake for 5-6 minutes (no more)! Put the egg whites in a bowl, add the sugar and beat, until a white mixture is obtained. Grind the cooled almonds in a blender.
Add them in portions to the beaten egg whites. Flavor with 2-3 drops of bitter almond essence. Shape small sweet balls from the mixture and place them on a tray lined with baking paper.
Bake the almond amaretti cookies in a preheated oven without a fan for about 15-20 minutes. Cool the egg white sweets on a wire rack. The almond cookies can be kept crunchy, by storing them in a glass jar with a tightly sealed lid.
