Ingredients

  • almond flour - 5.3 oz (150 g)
  • white wheat flour - 5.3 oz (150 g)
  • lard - 3.5 oz (100 g)
  • egg whites - 1 pc.
  • sugar - 8 oz (230 g)
  • peel of 1/2 lemon - only the yellow part
  • baking powder - 1 tsp.

How to make

Grind the sugar and lemon peel into a powder in a blender or coffee grinder.

Measure part of the lemon powdered sugar (150 grams) for the dough and set aside the rest for rolling the cookies in it.

In a bowl, mix the almond and wheat flour with the baking powder and sugar (150 g)

Add the lard and egg white and knead a smooth dough. If the dough remains drier, you can add a tablespoon or two of milk.

The lard dough is formed into a ball, wrapped in stretch foil and stored in the refrigerator for 10-15 minutes.

During this time, preheat the oven to 180°C.

The almond cookies are shaped either by hand or by rolling the dough out onto a floured surface and cutting out shapes from it. The only condition is that the sweets are at least a centimeter thick, because when baked they will become thinner.

Arrange them in trays lined with baking paper, spaced apart and bake them for about 10 minutes or until they're lightly browned.

When the homemade lard cookies have cooled slightly, roll them in or sprinkle them with the rest of the lemon powdered sugar. While they are still very hot, they should not be touched because they will still be soft, but after a while they harden.
