Ingredients

  • fine corn flour - 7.5 oz (210 g) + for sprinkling
  • wheat flour - 3.5 oz (100 g)
  • lard - 5.6 oz (160 g)
  • orange juice - 2/5 cup (100 ml)
  • anise liqueur - 3 tbsp. (or mastic, ouzo)
  • sugar - 5 - 6 tbsp.
  • vanilla sugar - 1 1/2 tsp.
  • cinnamon - 1/2 tsp.
  • orange peel - from two oranges, large
  • powdered sugar - for rolling
  • baking powder - 1 tsp.

How to make

Sift both types of flour with the baking powder into a bowl. Put the lard (cold and hard from the fridge) and mix with your fingers until you get large crumbs.

Pour the orange juice and grate the peel very finely (only the orange part). Add the vanilla and granulated sugar and cinnamon and knead a smooth dough. Shape it into a ball, wrap it in cling film and leave it to set in the fridge for 30-40 minutes to an hour.

Roll out the hardened dough onto a floured surface and cut out the shapes you prefer. Arrange them at a little distance in a tray covered with baking paper.

Bake in a preheated oven at 370°F (185°C) for 12-15 minutes or until golden (I bake them in two batches in the oven tray).

Let the lard cookies cool and roll them in powdered sugar.

Extremely aromatic and delicate cookies, which just melt in your mouth!
