"For all those who haven`t tried Kourkoubinia before - it`s a unique Turkish dessert that`ll have you eating till you can eat no more."

  • lemon juice - 1 tsp (5 g)
  • vanilla sugar - 1
  • oil - 1 1/5 cups (300 ml)
  • water - 2 cups
  • sugar - 2 cups
  • phyllo pastry - 1 packet, sheets

How to make

Make a sugar syrup from the water, sugar by boiling them in a pot on the stove. Flavor the syrup with the vanilla sugar and lemon juice. Leave it to cool completely.

Take 2 phyllo pastry sheets at a time, smear them with oil, smear with water along the ends and wrap them into rolls.

From thus formed rolls, cut out pieces of the same size. Heat oil in a deep container on moderate heat (not too high) and fry them.

Dip the fried Kourkoubinias in the cold syrup. Arrange them in a suitable deep tray or bowl and pour on the remaining syrup.
